Usually some mix of barre chords high up the neck, fingerpicking, a key change partway through or a strumming pattern with real syncopation. A lot of these are fingerstyle arrangements carrying both the melody and the accompaniment on four strings.
My fingerpicking guide covers this properly, but the short version: give your thumb the top two strings and your index and middle fingers the bottom two, then keep that assignment fixed. Play the pattern on one chord until your hand stops thinking about it and only then move it through the song.
